
Made waffles for breakfast--best recipe I've ever found:
Buttermilk Waffles
(from Our Daily Bread, by Stella Standard--Out of print)
1-1/2 c. sifted flour
3 tsps. baking powder
1/2 tsp salt
2-3 eggs, separated
1-1/2 c. buttermilk
6 Tbs. melted butter
2 Tbs. brown sugar
Begin heating the waffle iron before you start the batter. Sift the dry ingredients into a largish bowl. Whisk the egg yolks into the buttermilk. Beat the egg whites to stiff peaks, adding brown sugar part way through. Stir the egg / buttermilk mixture into the flour mixture, then stir in melted butter. Stir half of the egg whites to lighten the batter, then fold in the remaining egg whites. Spoon onto hot iron.
Served with maple syrup and Deck Family Farm bacon (pastured pork, no added nitrates/nitrites)
Then off to the market on yet another damp, cold, gray morning.

- Tiny summer squash
I just read a recipe for garlic green beans and they recommended spring garlic . . . you par steam or boil the green beans and shock them. Then toast some almonds. Chop up lemon zest and parsley together. Heat up oil in a frying pan and saute the garlic, add in the green beans to toss . . . top with the lemon/parsley mixture and the toasted almonds.
ReplyDeleteOh, and your blog makes me insanely jealous and prone to mutter not terribly charitible things about the fact you have such lovely food at your finger tips and I live in culinary purgatory.
This post makes me homesick... Mom always made me waffles on her 3-legged waffle iron on the weekend. My first serving would be with butter and syrup... second serving with PB & J. YUM!
